Backyard BBQ Bonanza: Performance Task Lesson (2 hours)

 


Target Audience: This lesson is designed for middle or high school students with basic cooking experience.

Learning Objectives:

  • Students will be able to identify essential elements of successful BBQ planning (menu selection, budgeting, safety). (Knowledge)
  • Students will be demonstrate safe and proper knife skills for BBQ food preparation. (Skills)
  • Students will be able to prepare a variety of BBQ dishes following recipes or adapting them creatively. (Skills)
  • Students will be able to collaborate effectively to grill, present, and clean up after the BBQ. (Application)

Materials:

  • A variety of BBQ ingredients (meat, vegetables, buns, condiments) – enough for student groups to prepare a selection of dishes
  • Grilling equipment (grills, tongs, spatulas, grill brushes)
  • Cutting boards
  • Knives (appropriate for different tasks)
  • Plates, utensils, serving dishes
  • Grilling mitts
  • Safety glasses (optional)
  • Recipe resources or recipe creation tools

Safety:

  • Emphasize grill safety throughout the lesson.
  • Ensure students wear closed-toe shoes and appropriate clothing.
  • Instruct students on proper handling of hot grills and utensils.
  • Adult supervision is required during grilling activities.

Lesson Procedure (120 minutes):

Planning and Preparation (60 minutes):

  1. Welcome and Introduction: Briefly introduce yourselves and the lesson's objectives.
  2. BBQ Brainstorming: Discuss the different elements of a successful BBQ (food choices, side dishes, drinks, etc.).
  3. Budgeting Challenge: Divide students into groups and provide them with a hypothetical budget for their BBQ feast. Challenge them to plan a menu that stays within budget.
  4. Recipe Research: Students research recipes for various BBQ dishes or use provided recipes. Encourage creativity and adaptation.
  5. Safety First: Review essential grilling safety tips, including proper handling of hot coals/gas, grill placement, and fire extinguisher use.

Grilling and Presentation (40 minutes):

  1. Skill Demonstration: Demonstrate safe and proper knife skills for BBQ food preparation (chopping, slicing, dicing).
  2. Cooking Stations: Set up different cooking stations for grilling various dishes. Students work collaboratively within their groups at assigned stations.
  3. Grilling Time: Under adult supervision, students use the grills to cook their chosen BBQ dishes, following recipes and practicing safe grilling techniques.
  4. Presentation Perfection: Students collaborate to plate their prepared BBQ dishes in an attractive and appetizing way.

Wrap-up and Assessment (20 minutes):

  1. BBQ Feast: Enjoy the delicious BBQ creations together as a class!
  2. Group Discussion: Facilitate a discussion about the BBQ experience. Discuss challenges encountered, successes achieved, and teamwork dynamics.
  3. Assessment: Use a rubric to assess student performance on key aspects like menu planning, safe food preparation techniques, grilling skills, teamwork, and overall presentation of their BBQ dishes.

Extension Activities:

  • Research the history and cultural significance of BBQ around the world.
  • Design and create custom BBQ invitations or table decorations.
  • Plan a future BBQ event for a specific theme or charity fundraiser.

Differentiation:

  • For students with dietary restrictions, provide alternative ingredients or recipe suggestions.
  • For students with less experience, offer more guidance and support during recipe selection and cooking tasks.
  • For advanced students, encourage them to experiment with more complex grilling techniques or marinades.
